Butternut Squash Chips


  • 1 butternut squash
  • olive oil
  • fresh rosemary
  • salt
  • fresh ground pepper


Preheat oven to 375 degrees.

Wash squash under cool running water.

Cook squash in microwave for 2-3 min on high. Once done, take out and let cool for an additional five minutes.

Once cooled, peel and seed squash.  Then slice into approximately 1/8″ pieces.

Lay a piece of parchment paper on a baking sheet.  Then lay out in a single layer all the squash pieces.

Brush with olive oil then Sprinkle with rosemary, salt, and pepper to taste

Bake at 375 degrees for 20 minutes or until crisp.
